Ingredients for Achar gosht:
Red chilli powder 2Tspns
Turmeric powder 1\2 Tspn
Ginger-garlic paste 2Tbspns
Garam masala powder 1tspn
Curry powder 2Tbspns
Tomato paste 1cup
chopped onions 2-3
Salt to taste
Mustard Oil 3Tbspns
Coriander leaves 1bunch (optional)
Achar masala 4tbsp
For the bagaar
Olive Oil 2tbsp
Cumin seeds 1tspn
Kalonji 3/4th tspn(caraway seeds)
Methi 3/4th tspn
Curry leaves -10 (optional)
For Achar masala
50 grams red chilies flakes
1 tbsp salt
1 tbsp turmeric powder
1 tbsp coriander seeds
1 tbsp onion seeds (Kalonji)
2 tbsp fennel seeds (Saunf)
1 tbsp fenugreek seeds (Methi Dana)
2 tbsp mustard seeds (Rai)
1 tsp. ajwain seeds
How to make Achar gosht:
For Achar masala (1/2 cup)
Dry roast & coarsly grind Rai, Methi dana, Ajwain, saunf, and coriander seeds
Add red chilies flakes, salt, turmeric powder and kalonji.
Mix well and store in a Jar
For Achari Gosht
Marinade the mutton with 2 tbsp achar masala powder,ginger-garlic paste, garam masala powder and yogurt for 2 hours.
Slit Green Chillies from one side in length, take out seeds and stuff with Achaar Masala
Heat the oil till smoking point, let it cool then reheat the oil saute onions till they turn pink
Add meat and sprinkle rest of Achaar Masala on top, saute for 5-10mins
then add tomato’s and cook covered till they are soft,
Pour curd and Add sufficient water, (cover with a lid)
Simmer & cook on low heat till meat is tender (or pressure cook for 10-15mins)
Heat olive oil in a seperate pan, add bagar and let it splutter..take care not to burn the methi. Add in curry leaves and stuffed green chillies and fry for a 1 min.
Pour the Prepared curry in the pan and cook till oil starts leaving sides and the gravy is medium thick.
I didn’t, but its always better to garnish it with coriander leaves and serve hot
ANOTHER VERSION OF RECIPE
– Beef (boneless) 500g
– Mehran Mixed Pickle 3 tbsp
– Mehran Garlic Paste 2 tbsp
– Mehran Ginger Paste 2 tbsp
– Mehran Chilli Powder 1-1/2 tbsp
– Mehran Turmeric Powder 1 tbsp
– Tomato (slice cutting) 6
– Cooking Oil 4 tbsp
– Water as needed
– Onion (slice cutting) 2
– Salt as per taste
– Cumin Powder 1 tbsp
– Coriander Crushed 1 tbsp
– Green Chilli 4
– Yogurt half cup
– Butter 1 tbsp
1- In a cooking pot, add water, onion, tomato, Mehran Garlic Paste (1 tbsp), Mehran Ginger Paste (1 tbsp) and cook for 2-3 minutes.
2- Now, simmer for 5 minutes and then strain and grind it.
3- In a cooking pan, add cooking oil, beef, Mehran Garlic Paste (1 tbsp), Mehran Ginger Paste (1 tbsp), Mehran Red Chilli Powder, Mehran Turmeric Powder, salt, cumin powder, coriander crushed, green chilli and saute them.
4- Now, add grinded paste and cook for 2-3 minutes.
5- Now cover and simmer until tender.
6- Next, add yogurt, Mehran Mixed Pickle and cook for 5 minutes.
7- Now, add the butter and use green coriander, green chilli, ginger for garnishing.
Your tasty Achar Gosht now ready to serve.
